🔥 Firecracker BBQ Pulled Pork Mac & Cheese Bowls

🛒 Ingredients

For the Pulled Pork

2 lbs pulled pork (homemade or store-bought)
1½ cups smoky BBQ sauce
2 Tbsp brown sugar
1 Tbsp apple cider vinegar
1 tsp smoked paprika
1 tsp garlic powder

For the Mac & Cheese

16 oz elbow macaroni
4 Tbsp butter
¼ cup all-purpose flour
3 cups whole milk
1 cup heavy cream
3 cups sharp cheddar cheese, shredded
1 cup smoked Gouda, shredded
½ cup Parmesan cheese, grated
1 tsp Dijon mustard
½ tsp onion powder
Salt & black pepper, to taste

Toppings

6 slices bacon, cooked and crumbled
2 jalapeños, sliced
Green onions, chopped
Crispy fried onions
Extra BBQ sauce
Fresh parsley


🧰 Supplies You’ll Need

Large stock pot
Large skillet or saucepan
9×13 baking dish (optional)
Whisk
Wooden spoon
Measuring cups & spoons
Colander


🔥 Instructions

  1. Cook macaroni according to package directions. Drain and set aside.
  2. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  3. Slowly whisk in milk and heavy cream until smooth.
  4. Stir in cheddar, Gouda, Parmesan, Dijon, onion powder, salt, and pepper until melted.
  5. Fold in the cooked macaroni.
  6. In another pan, combine pulled pork, BBQ sauce, brown sugar, vinegar, smoked paprika, and garlic powder. Simmer for 10 minutes.
  7. Spoon creamy mac & cheese into bowls.
  8. Top with a generous pile of BBQ pulled pork.
  9. Finish with bacon, jalapeños, crispy onions, green onions, parsley, and an extra drizzle of BBQ sauce.

🐢 Make-Ahead Version

Prepare the mac & cheese and BBQ pork a day ahead.
Refrigerate separately.
Reheat and assemble just before serving.


⚡ Quick Weeknight Version

Use refrigerated pulled pork from the deli.
Use your favorite boxed mac & cheese and upgrade it with extra shredded cheddar.
Dinner is ready in about 20 minutes.
